A mild, slightly sweet tea on its own
Half a kilo of whole dried blue mallow flowers, Malva sylvestris, from Iran, a trade-sized bag for herbalists, tea blenders, soap and bath makers and anyone who uses the flower by the handful rather than the pinch. Blue mallow is the flower that turns a herbal tea blue and then pink when lemon is added, hence its place in so many colour-changing blends, and on its own it makes a mild, slightly sweet, mucilaginous infusion that has been drunk in Persia and the Mediterranean for centuries. Whole flowers hold their deep violet-blue colour, so they are also used dry, in potpourri, in bath salts and scattered on candles and soaps for decoration. Five hundred grams of whole flowers is a lot of volume, enough for a season of blending or a market stall. Store cool, dark and dry and the colour keeps.
