Palo santo means holy wood, and it has been burned across South America for centuries to clear the air and see off what people would rather not carry around with them. Today it gets lit in homes all over Europe, often for no better reason than the smell: warm and woody with a sweet, slightly resinous edge, and far milder than white sage, which catches in the throat if you are not used to it. It also does not settle into curtains and cushions the way sage smoke can.

A kilo is a big bag — several dozen sticks — and buying it this way costs a fraction of the ten-pack price. One by every burner, a year of refills for the ash catcher, and a pile still left over. This is first grade wood, which means it is dense and full of resin rather than the pale, dry pieces that struggle to catch.

Light the tip, let it burn for about thirty seconds, then blow the flame out and let it smoke, resting the stick in an ash catcher or a heatproof dish. Each one relights ten or fifteen times before it is spent. It is cut from naturally fallen Bursera graveolens, not felled trees.
